The state of Chiapas is home to Mexico’s largest and oldest coffee-growing region. Some farms look back on more than a hundred years of history. With the influence of the Atlantic Ocean on one side and the Pacific Ocean on the other, the mountain slopes of the Sierra Madre Chiapas cross the region, dividing the state and creating various special microclimates.
Located in Yajalon municipality, Grupo Siembra Abundante was founded in 2019 as a group of smallholders, mostly from Tzeltal ethnic group, conformed by 585 producers: 310 men and 275 women. Members of the organization specialize in the production of organic coffee, and environmentally responsible production aiming at high quality. A strong principle for the farmers is the preservation of the environment, natural resources, eliminating the use of agrochemicals and to produce in the most sustainable way possible.

How to Brew

Moka Pot

Grind your coffee slightly coarser than granulated sugar. We recommend dosing the coffee according your own machine’s recommendation.

Fill the lower chamber with hot water. Place the funnel in the pot without letting water get in.

Fill the funnel with the ground coffee, smooth the coffee grounds (do not tamp) and wipe the rim of the funnel clean. Screw the upper part of the Moka Pot tightly.

Place the Moka Pot on the stove over medium heat. As soon as you hear a hissing, gurgling sound, take it off the stove immediately. Let the coffee flow into the upper chamber until the end.
