The state of Chiapas is home to Mexico’s largest and oldest coffee-growing region. Some farms look back on more than a hundred years of history. With the influence of the Atlantic Ocean on one side and the Pacific Ocean on the other, the mountain slopes of the Sierra Madre Chiapas cross the region, dividing the state and creating various special microclimates.
Located in Yajalon municipality, Grupo Siembra Abundante was founded in 2019 as a group of smallholders, mostly from Tzeltal ethnic group, consisting of 585 producers: 310 men and 275 women. Members of the organization specialize in the production of organic coffee, and environmentally responsible production, aiming for high quality. A strong principle for farmers is the preservation of the environment, natural resources, eliminating the use of agrochemicals, and producing in the most sustainable way possible.

How to Brew
Our recommendation would be to brew our CHIAPAS BIO as an espresso, with a portafilter espresso machine.
The recipe we use is:
19 gr coffee in, and you’ll get 42 gr out.
Brew time should be 31 – 33 seconds.
