Carbonic maceration

This method was first developed in winemaking and later adapted to the coffee industry. In the carbonic maceration process, coffee cherries (whole fruits) are fermented in sealed tanks filled with carbon dioxide (CO2). CO2 slows down oxidation and helps gently extract certain enzymes and trace elements that affect the taste of coffee. The result is coffee with brighter, more complex flavor notes, such as tropical fruits, berries, and sweet spices.

A natural method of decaffeination is commonly used to remove caffeine, without the use of chemical solvents such as methylene chloride. For this coffee, the method used is the CO2 process (carbon dioxide decaffeination process), which involves soaking the beans in water and then exposing them to high-pressure liquid carbon dioxide. This gently extracts the caffeine while preserving the flavor profile of the beans.
